An ampersand (that’s the name for &) is, like contractions, considered too informal to use in a scientific text. Some citation style guides (like APA that nurses use) use author lists with ampersands. I think that, because citations and references are considered “formal,” writers assume the ampersand is formal and use it in writing their texts. But the word “and” should always be used. Otherwise, it looks immature & stuff.
